I was able to use the tab from the U-Haul kit but it is a little oversized and I had to reshape it a bit. It isn't quite right but it is functional and will suffice until I stumble across something better. I'm psyched to have the trailer actually connected to the Jeep for the first real time. Here's the test fit:

...and I just noticed for the first time that I'm missing the bolt that holds the hitch in place near where the safety chains connect....

I had to bend that lever UP to make it work. Part of the problem is that it's made to fit around a 5/8" bolt, not the 1/2" one it's now mated with so it's a little sloppy. Bending it up like that looks goofy but it holds pretty well. If anyone does have an original lever and wants to part with it please let me know.

One more thanks to Lowenuf for hooking me up with the parts to complete my trailer hitch.

After getting the coupler secure, I rigged up some chains and the wiring and towed it over 50 miles in the past couple days. The trailer did not fall off so I consider that a success.
